Happy day after Thanksgiving! I hope you all had a wonderful day yesterday with family and amazing food! We of course had all of the good turkey, stuffing, and casseroles that your heart could desire. Cheesecake was my duty this year and those recipes will be up soon! But today is all about post Thanksgiving breakfasts.
I knew we would be feeling weighed down after Thanksgiving, especially since we do two! So I made these mini frittatas ahead of time to keep in the fridge for a quick and easy breakfast or snack.
I love any breakfast food that I can make ahead of time for our busy weeks. These mini frittatas are so simple and can be adjusted to fit any families needs.
Michael and I like spicy so I added andouille sausage to ours and oh my goodness were they good!
These little egg bites have already got me thinking of how great a mini frittata bar for house guests would be! Simply prepare your sausage or bacon (whatever you want to put into your frittatas), whisk eggs (for an even healthier option use egg whites) with salt and pepper, fill your muffin tins 2/3 full with the egg, add in toppings and bake.
