This week has been BUSY!! I would say I am not alone in the fact that the last thing I want to do when I get home from work is take an hour or more to make dinner. And as Michael would say, “hangry” (combination of hungry and angry) doesn’t look good on me 🙂 So I am always looking for ways to make weeknight meals as easy and as quickly as possible but also delicious!

This tortellini skillet is perfect for a quick but comforting dinner after a long work day. Cheesy tortellini and Italian sausage covered in your favorite pasta sauce, cheese, and diced tomatoes… Quick, simple, and filled with flavor!
Start by heating one tablespoon of olive oil in a large skillet (I use a 12 inch skillet). Cook onion until translucent about 3-4 minutes. Add sausage and cook through until no longer pink while breaking into small pieces. Stir in your chosen pasta sauce, diced tomatoes, and 1/2 of a cup of water to the meat and onion. Add in the tortellini and bring the skillet mixture to a boil. Once boiling, turn heat down to low and simmer for about 10 minutes. Stirring occasionally until the tortellini is tender. Top with Parmesan cheese and it is just that simple!
