Ingredients
  • 2 chicken breast
  • 1/2 pd asparagus
  • 1/2 cup cherry tomatoes halved
  • 1/8 cup sun dried tomatoes chopped
  • 1/8 cup basil pesto
  • 1 9 ounce package torellini
  • 1 tablespoon olive oil
  • 2-4 ounce mozarella
  • salt & pepper to taste
Instructions
  1. Cut chicken into 1 inch chunks and season with salt and pepper.
  2. Heat up 1 tablespoon of olive oil in skillet and cook chicken through.
  3. While chicken cooks half cherry tomatoes, chop ends off asparagus, and coarsely chop sun dried tomatoes.
  4. Cook tortellini according to package instructions.
  5. Remove chicken once cooked through onto a separate plate.
  6. Place asparagus, tomatoes, and sun dried tomatoes into same skillet and cook until asparagus is tender – about 10 minutes.
  7. Add chicken, tortellini, mozzarella pieces, and pesto into skillet. Stir until fully coated.
  8. Serve and enjoy!
