This week has been life changing! I say that slightly sarcastically, but it is still true. I had a few days where I was taken down by quite the headache so what else can a girl do but watch Netflix documentaries, right?! Michael and I are obsessed with documentaries right now. I will have to publish a list of our favorite ones along with our binge worthy TV shows soon!
We watched “In Defense of Food” on Netflix which is a documentary based on Michael Pollan’s #1 New York Times bestseller. I have to give full credit to Michael on this one. He has read several of Pollan’s publications before and made the pick! We loved this documentary. We are pretty healthy eaters already, but with so much talk of Whole30, Paleo, and other meal plans around this time of year we started to doubt ourselves. After watching this documentary, we were immediately inspired and headed to Whole Foods for our weekly shopping trip. Pollan’s simple, common sense view on food was the exact push that we needed to be confident in taking our health to the next level!
Today’s recipe is a twist on one of my favorite dishes, caprese pasta, in order to incorporate more veggies into our diet! Zucchini Noodle Chicken Caprese is the perfect quick and healthy one pot dinner. Full of tomatoes, fresh mozzarella, chicken, garlic, and basil. Healthy, fresh, and delicious. Recipe is below!
