Remember when I said I was really feeling apple season?

Yep, still feeling it. Apple pies, apple slices with caramel sauce, apple biscuits – I’ll take them any way I can get them! A few weeks ago, while in a serious recipe day dreaming session, I had a craving for biscuits and the rest is history.

After several batches and the last minute (genius) addition of a cinnamon glaze, I am SO proud of these little babies. I keep a running list of my absolute favorite recipes that hit GFG in preparation for the glorious day that they will all be incorporated into my very own published book (got to manifest that stuff, right?!) and you better believe these biscuits will be in it!

Now, I must know… What would you put in a biscuit?!

 

Cinnamon Apple Biscuits

Biscuits:

2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon baking soda

3/4 teaspoon salt

4 ounces cream cheese

1/4 cup unsalted butter, cold

2 tablespoons unsalted butter, melted

3/4 cup diced apples

1/2 cup brown sugar

1 1/2 teaspoons cinnamon

3/4 cup cold buttermilk

Cinnamon Glaze:

2 ounces cream cheese

1 cup powdered sugar

2 teaspoons cinnamon

2 tablespoons milk

Directions:

Preheat the oven to 400 degrees.

In large mixing bowl, combine flour, baking powder, baking soda, salt, brown sugar, and cinnamon.

Using a pastry cutter (or two forks), cut in the cream cheese and butter until pea sized clumps form throughout the mixture.

Stir in the diced apples. And add buttermilk, stirring gently to combine.

Move dough onto a floured work surface and with floured hands begin to gently pat it into a 1-2 inch rectangle.

Using a 2 inch biscuit cutter, cut out biscuits and gently place onto a baking sheet.

Brush the top of each biscuit with the melted butter and place in oven.

Bake for 18 minutes or until tops are lightly golden.

Cinnamon Glaze:

Beat cream cheese, powdered sugar, and cinnamon in large mixing bowl until smooth.

Add the milk and continue mixing until smooth and creamy.

Drizzle over each finished biscuit.
