When I say this is a five minute salad, it really is a five minute salad. This salad is so refreshing and delicious that it has become a staple at our house during peach season! It makes the perfect memorable side salad for cookouts, luncheons, Mother’s Day, Memorial Day and so much more. I prefer to serve mine chilled, but when you taste how incredibly these flavors mix you may not care what temperature it is!

Peach Caprese Salad Ingredients

  • 4 peaches, sliced & cold
  • 8 ounces mozzarella slices
  • Basil leaves, fresh
  • 1/2 cup white balsamic vinegar
  • Salt & Pepper, to taste

White Balsamic Vinegar vs. Balsamic Vinegar

The process of making vinegar is very similar to that of making wine. The grape pressings are simmered for hours resulting in a syrup that is placed into barrels and aged for years. An authentic balsamic vinegar is aged no less than 12 years and up to 25 years, while a white balsamic is aged up to only one year to retain its lighter flavor.

The differences between white balsamic vinegar and balsamic vinegar are:

  • Darker balsamic is slightly sweeter
  • Darker balsamic has more of a syrupy texture
  • White Balsamic has a softer flavor
  • White Balsamic has a fresher/cleaner aftertaste
  • White Balsamic is lightly golden in color and doesn’t discolor what it is poured onto like a dark balsamic

When To Use White Balsamic Vinegar

White balsamic vinegar is an excellent choice in the spring and summer as it pairs wonderfully with the fresh ingredients of these seasons! Some of my favorite uses include the following:

  • Drizzle over fruit such as watermelon or cantaloupe
  • Toss with grilled vegetables like asparagus or zucchini
  • Drizzle over a goat cheese crostini
  • Add to a fresh pasta with salt, pepper and lemon juice

How to Make a Peach Caprese Salad

  1. Slice peaches and mozzarella.
  2. Place peach slices, mozzarella slices, and basil leaves in a large bowl or onto a serving platter.
  3. Drizzle the white balsamic vinegar over top and sprinkle with salt & pepper.
