Happy New Year friends! What better time to launch a cookbook club than January 1st?! When I decided to start this cookbook club, I already knew this book was the perfect pick for January. If you are anything like me, you hit the holiday sweets and treats pretty hard and are more than ready for a reset right about now! January’s pick is full of quick and easy recipes focusing on plant-based whole foods. Michael and I spent the last few months of 2019 focusing on plant-based diets and this book was a godsend! From the to die for Ultimate Flourless Brownies to Oh Em Gee Veggie Burgers, you MUST give this one a go!

Full disclosure friends, in no way do I consider myself vegan, vegetarian, or gluten free. What I am is a girl, trying to be the very best version of herself by putting good in. A few months ago, Michael and I were watching a documentary on Netflix called “The Game Changers” (a must watch btw!!) which is all about the benefits of a plant-based diet. It got me to thinking about how I’ve never really been crazy about meat anyway and if I’m being totally honest… I hate cooking it! The more that we looked into the benefits of eating plant-based, the more we wanted to try our hand at it. We started by making simple switches like veggie burrito bowls instead of chicken and veggie burgers instead of beef, but I was very quickly running out of ideas for dinner. Enter Oh She Glows Every Day! The title, quick and satisfying, was exactly what I was looking for! I’ve been using this cookbook for several months and while we aren’t strictly plant-based when we go out to dinner, we are noticing some major benefits by keeping at home meals plant-based. As we head into the New Year, one of our goals is to continue to learn and get more comfortable with making plant-based meals at home!
