Rustic Apple & Pear Galette
Galettes are one of my new found favorite desserts! Basically a simplified (or lazy) version of a pie. And boy does this girl love her pies!
I am already so looking forward to the spring and summer when all of my favorite fruits are back in season but with this warm weather we have had this week I had to humor myself with this apple and pear galette! Close enough to a pie to satisfy 🙂 Filled with sweet honeycrisp apples and tart pears, top with ice cream and enjoy this fruity treat!
I love the flavor of pear and apple together especially when it looks as gorgeous as it tastes. Not only does it look gorgeous but it takes no time at all to make. From start to finish, this easy dessert took me about 45 minutes. And I can already imagine one of these filled with peaches come summer time!
To start cut apples and pears into thin slices and mix together with brown sugar, vanilla, and corn starch in a medium sized bowl. Let the fruit mixture sit for about 15 minutes so that the fruit can release its juices. Preheat oven to 375 degrees. While waiting on fruit, roll out a pre made pie crust into a 12 inch circle and place on a rimmed baking sheet lined with parchment paper. Place fruit and remaining juices into the center of the pie crust while leaving a 2 inch border around the fruit. Brush the inside of the bare 2 inches with egg and fold over creating a barrier for the fruit. Brush the outside of the folded over dough with egg and sprinkle with brown sugar. Bake for 35-40 minutes until fruit is bubbling and crust is golden. Serve warm topped with ice cream! I also love this dessert cold! Enjoy!
