Sweet Potato & Black Bean Bowls

These Sweet Potato & Black Bean Bowls are loaded with flavor. Full of healthy ingredients, this dish makes for a great meatless dinner option!

Where do I even begin with these bowls?! 

Over the last year or two, Michael and I have really cut down on the amount of meat that we eat. It wasn’t some huge decision that we made one day but something that just happened organically over time when we would notice how much better we felt after eating plant based meals as opposed to meat focused ones. This coming from a couple who previously ate chicken five nights a week! 

If you have ever attempted a plant based diet, you probably know how quickly it feels like you run out of meal ideas. Because of this, we committed to finding at least 10 recipes that we knew we loved and could pull from when we got stuck asking, “What do you want to do for dinner?”. These Sweet Potato & Black Bean Bowls are at the very top of that list! They are easy to make, full of great flavors, and so satisfying.

Sweet Potato & Black Bean Bowl Ingredients:

To make this Sweet Potato & Black Bean Bowl recipe, you will need the following ingredients. See the full recipe card below for detailed amounts and instructions! 

  • Sweet potato – Just takes one large one, peeled and cubed. I like to cut mine into smaller cubes as pictured.
  • Black beans – Drained and rinsed
  • Olive oil – For that perfect bake!
  • Cajun seasoning – Trust me, this seasoning is a flavor key! 
  • Salt & pepper – Of course
  • Rice – We prefer brown rice, but choose your favorite.
  • Avocado – The perfect topper
  • Lime juice – You’ll need about 3 limes worth!
  • Cilantro – Fresh is best
  • Salsa – Choose your favorite, but I always recommend salsa verde! 
  • Cotija cheese – I strongly recommend giving this cheese a try first (so much flavor!), but if it’s not your thing your favorite cheese will do!

How to Make Sweet Potato & Black Bean Bowls:

To make this Sweet Potato & Black Bean Bowl recipe, simply:

  1. Bake: In a large bowl, mix cubed sweet potatoes, black beans, olive oil, Cajun seasoning, salt, and pepper until all are evenly coated. Place mixture on a rimmed baking sheet lined with aluminum foil and bake at 400° for 20 minutes. 
  2. Make rice: Cook rice according to package instructions. When finished cooking add cilantro, lime juice, and a dash of sea salt. Mix to combine.
  3. Prep toppings: In a small bowl, combine diced bell pepper, lime juice, salt, and pepper. In a second small bowl, combine diced avocado, lime juice, salt, and pepper. Grate cotija cheese. 
  4. Assemble: Place rice at the bottom of the bowl, add sweet potato and black bean mix, top with bell peppers, avocado, salsa, and cotija cheese.

Variations:

Switch up the toppings – Make it your own by choosing your favorite sauces, salsas, or jalapeños. 

Change the spice on the sweet potato & black beans – Chili Lime seasoning is amazing on these as well! 

Turn it into a burrito – Sometimes we will take all of these ingredients and make them into one big burrito for a fun change up.

Ingredients

  • 1 large sweet potato, peeled & diced
  • 15 oz can black beans, drained & rised
  • 1/4 cup olive oil
  • 1 tablespoon cajun seasoning
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup (dry) brown rice
  • 1 teaspoon fresh cilantro, chopped
  • 3 limes, juiced
  • 1 large avocado, diced
  • 1 yellow bell pepper, diced
  • Cotija cheese & salsa for topping

Instructions

    1. Bake: In a large bowl, mix cubed sweet potatoes, black beans, olive oil, Cajun seasoning, 1/2 teaspoon salt, and 1/2 teaspoon black pepper until all are evenly coated. Place mixture on a rimmed baking sheet lined with aluminum foil and bake at 400° for 20 minutes. 
    2. Make rice: Cook rice according to package instructions. When finished cooking add cilantro, 2 tablespoons lime juice, and a dash of sea salt. Mix to combine.
    3. Prep toppings: In a small bowl, combine diced bell pepper, 1 teaspoon lime juice, salt, and pepper. In a second small bowl, combine diced avocado, 1 teaspoon lime juice, salt, and pepper. Grate cotija cheese. 
    4. Assemble: Place rice at the bottom of the bowl, add sweet potato and black bean mix, top with bell peppers, avocado, salsa, and cotija cheese.

    I made this soup this weekend. It is so delicious! I love Olive Garden’s minestrone soup and this is much better. Thank you for posting the recipe.
