This Sweet Potato & Black Bean Rice Bowl recipe is loaded with flavor. Full of healthy ingredients, this dish makes for a great meatless dinner option!
Where do I even begin with this rice bowl?!
Over the last year or two, Michael and I have really cut down on the amount of meat that we eat. It wasn’t some huge decision that we made one day but something that just happened organically over time when we would notice how much better we felt after eating plant based meals as opposed to meat focused ones. This coming from a couple who previously ate chicken five nights a week!
If you have ever attempted a plant based diet, you probably know how quickly it feels like you run out of meal ideas. Because of this, we committed to finding at least 10 recipes that we knew we loved and could pull from when we got stuck asking, “What do you want to do for dinner?”. This Sweet Potato & Black Bean Rice Bowl recipe is at the very top of that list! They are easy to make, full of great flavors, and so satisfying.
Let’s make some!
